
Yogurt Pancakes Recipe

Ingredient List
- 1 cup Yoplait Original French Vanilla single-serve yogurt
- 1 large egg
- ½ cup all-purpose flour
- 1 tsp baking soda
- Butter or oil (for cooking)
Optional
- Fruit for topping (berries, banana, etc.)
- Nuts for topping (almonds, walnuts, etc.)
- Maple syrup or honey
- 1-2 tbsp milk
Preparation
- In a bowl, add the Yoplait yogurt and the egg. Whisk until smooth.
- Add the flour and baking soda to the bowl and mix until combined – the batter should be lump-free!
- Warm a frying pan over medium heat. Add a small amount of butter or oil to coat the surface.
- Add a large spoonful of batter to the pan and cook until bubbles form on the surface and the edges are dry. Don’t rush this part, it should take 3-4 minutes.
- Flip the pancake and cook the other side until golden, so around 1-2 minutes.
- Stack and serve the pancakes with your choice of topping.
Tips
- For a bit more protein in your pancakes, try using Yoplait Protein Vanilla yogurt.
- You can use an egg white instead of a whole egg, if preferred.
- If the batter is too thick, add a splash of milk (1-2 tablespoons) to loosen it up.
- Cook the pancakes on a medium heat to ensure they cook without burning the outside. If the pan is too hot, the pancakes may brown too quickly on the outside by remain raw inside.
- Use a non-stick pan to make the flipping process easier without excess oil or butter.
